Avocado Toast with Eggs, Kale & Feta

This avocado toast recipe brings together a balance of nutritious ingredients with a healthy dose of protein, fiber and fat to fuel your day. With minimal prep and cook time, this recipe is perfect for anyone looking for a quick, nutrient-dense breakfast that doesn’t sacrifice flavor or convenience.

Ingredients2 servings

  • 4 large eggs
  • 2 slices of whole grain or sourdough toast
  • 2 cups fresh kale, chopped
  • 1 ripe avocado, mashed
  • 2 oz feta cheese, crumbled
  • 1 lemon, juiced (optional)
  • 1.5 tbsp olive oil
  • 1 tsp garlic powder
  • ¼ tsp salt
  • Garnish: feta cheese, chopped mint or parsley

Directions

Heat 1 tbsp of olive oil in a pan over medium heat. Add chopped kale, garlic powder and lemon juice, if desired. Sauté until wilted, about 5 minutes. Season with salt.

In the meantime, heat the remaining ½ tbsp oil in a pan over medium-low heat. Carefully crack 4 eggs onto the pan and cook them sunny-side-up for 3-4 minutes, until the whites are set but the yolk remains soft. Spread the mashed avocado evenly onto each piece of toast, top with sautéed kale, and eggs, then sprinkle with crumbled feta and herbs.

Notes:

  • Feel free to cook the eggs according to your preference, whether scrambled, sunny side up or poached! 
  • If you like a firmer yolk, cook the eggs for an additional 2-3 minutes.

    I will substitute the kale for spinach and cheese for goat cheese. This sounds wonderful. When I refresh my batch of avocados I am going to try this.
